Ingredients

  • 1 tablespoon olive oil
  • 1 onion finely chopped

  • 1 can 28 oz. crushed tomatoes, undrained
  • 1 can 4 oz. chopped green chilies
  • 1 can 15 oz. black beans, drained and rinsed
  • 1 can 15 oz. corn, drained
  • 1 pound cooked and shredded chicken rotisserie chicken works great!
  • 1.5 cartons of chicken broth approximately 6 cups
  • Optional toppings: shredded cheese sour cream (or Greek yogurt), sliced avocado, crunchy tortilla strips

Instructions

  • Heat the olive oil in a large pot over medium heat. Add the finely chopped onion and sauté until it turns translucent.
  • Add the minced garlic to the pot and cook for an additional minute until the aroma fills the air.
  • Sprinkle in the cumin and chili powder, stirring to coat the onions and garlic with the fragrant spices. Allow them to cook for about a minute.
  • Time to introduce the stars of the show! Pour in the crushed tomatoes, along with their juices, and add the chopped green chilies. Give everything a good stir to combine those wonderful flavors.
