Greek Chicken Quinoa Salad

Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cucumber chopped
  • 1 head lettuce chopped
  • 1 package Mediterranean chicken skewers from Costco
  • Juice of 1 lemon
  • Avocado oil spray
  • Salt and pepper to taste

Instructions

  • 1. In a saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the water is absorbed. Remove from heat and let it cool slightly.
  • 2. While the quinoa is cooking, chop the lettuce, cucumber and halve the cherry tomatoes. If using pre-made Mediterranean chicken skewers from Costco, heat them according to the package instructions and then slice them into bite-sized pieces.
  • 3. In a small bowl, whisk together the lemon juice and a spray of avocado oil. Season with salt and pepper to taste.
  • 4. In a large bowl, combine the cooked quinoa, chopped lettuce, halved cherry tomatoes, and sliced Mediterranean chicken skewers. Drizzle the dressing over the salad and toss gently to coat everything evenly.
  • 5. Transfer the Greek Chicken Quinoa Salad to serving plates or bowls. You can garnish with additional lemon wedges or fresh herbs if desired. This salad is delicious served warm or chilled, making it perfect for any occasion.
