Ingredients

Spicy Mayo

  • 1/2 cup Mayonnaise
  • 2 tbsp Sriracha
  • 1 tsp Fresh Lime Juice
  • Salt to taste

Red Wine Vinaigrette

  • 1/2 cup Extra Virgin Olive Oil
  • 3 tbsp Vinegar (red wine, balsamic, or white wine)
  • 1 tbsp Dijon Mustard
  • 1 tbsp Maple Syrup or Honey
  • 2 Garlic Cloves, minced
  • 1/4 tsp Sea Salt
  • Pepper to taste

Instructions

  • 1 If making homemade spicy mayo or red wine vinaigrette – prepare your sauce of choice: Spicy Mayo: Mix mayo, sriracha, and lime juice in a bowl. Taste and season with salt to taste. Red Wine Vinaigrette: Whisk or shake all ingredients in a jar until emulsified. Adjust seasoning to taste.
  • 2. Assemble the Roll-Ups: Layer the base: Lay out 2 overlapping lettuce leaves on a flat surface. Add the turkey: Place 1–2 slices of deli turkey over the lettuce. Spread & stack: Add your sauce (mayo, hummus, etc.), then layer in toppings of choice. Keep everything centered. Roll tightly: Fold in the sides slightly, then roll like a burrito. Secure & slice: Use a toothpick if needed. Slice in half for serving, or leave whole for grab-and-go.

Ingredient Notes:

  • Turkey: Look for high-quality, organic, nitrate-free deli turkey if possible.
  • Lettuce: Butter or romaine lettuce both work; use large leaves for easier rolling.
  • Sauces: Customize heat with more or less sriracha in spicy mayo.
  • Cheese: To make this recipe dairy free, simply skip the cheese!
  • Vegetables: Sliced cucumbers, tomatoes, and avocado add freshness and crunch.

Refrigerator: Assembled roll-ups can be stored up to 24 hours (wrap tightly in parchment or plastic wrap) and stored in an airtight container. Spicy mayo & vinaigrette can be stored up to 10 days in airtight containers in the fridge.
