Apple Cider Donut Balls

Natasha Pehrson Print Recipe

Ingredients

  • 1 small apple chopped
  • 1 tsp. pure vanilla extract
  • 2 Tbsp. unsweetened almond milk
  • ¾ cup / 90 g oat flour
  • ¼ cup / 25 g almond flour
  • 2 scoops Snickerdoodle Shakeology or your preferred protein powder
  • 1 Tbsp. coconut sugar
  • A pinch of cinnamon and cloves for that warm, cozy flavor

Instructions

  • Begin by chopping up a small apple into small, bite-sized pieces.
  • Place the chopped apple in a small, microwave-safe bowl and microwave it for about 1 minute or until it becomes soft and slightly tender.
  • In a blender, combine the microwaved apple, pure vanilla extract, and unsweetened almond milk.
  • Blend until you achieve a smooth, creamy consistency, making sure to scrape down the sides of the blender as needed.
  • In a medium-sized mixing bowl, combine oat flour, almond flour, Snickerdoodle Shakeology (or your preferred protein powder), and a pinch of cinnamon and cloves.
  • Gradually pour the apple mixture into the bowl of dry ingredients. Stir the mixture continuously until it comes together, forming a soft cookie dough-like texture.
  • Take the dough and shape it into 10 even-sized balls, each about 1½ inches (4 cm) in diameter.
  • For that extra touch of sweetness, dust each of the donut balls with a sprinkling of coconut sugar.
  • Serve these delectable apple cider donut balls immediately for a warm, cozy treat.
  • Alternatively, store them in an airtight container in the refrigerator for up to 3 days, or pop them in the freezer for up to 1 month to enjoy whenever that craving hits.
