Apple Cider Donut Balls

Today, I’ve got a delightful treat that’s perfect for satisfying your sweet cravings while keeping things on the healthier side. Say hello to our Apple Cider Donut Balls! These little bites of heaven are a twist on the classic apple cider donut but in a compact, convenient form. They’re not only delicious but also gluten-free and loaded with wholesome ingredients.

Ingredients 

– 1 small apple, chopped

– 1 tsp. pure vanilla extract

– 2 Tbsp. unsweetened almond milk

– ¾ cup / 90 g oat flour

– ¼ cup / 25 g almond flour

– 2 scoops snickerdoodle Shakeology (or your preferred protein powder)

– 1 Tbsp. coconut sugar

– A pinch of cinnamon and cloves (for that warm, cozy flavor)

Instructions

Prepare the Apple

Begin by chopping up a small apple into small, bite-sized pieces.

Microwave the Apple

Place the chopped apple in a small, microwave-safe bowl and microwave it for about 1 minute or until it becomes soft and slightly tender.

Blend the Apple Mixture

In a blender, combine the microwaved apple, pure vanilla extract, and unsweetened almond milk.Blend until you achieve a smooth, creamy consistency, making sure to scrape down the sides of the blender as needed.

Mix Dry Ingredients

In a medium-sized mixing bowl, combine oat flour, almond flour, snickerdoodle Shakeology (or your preferred protein powder), and a pinch of cinnamon and cloves.

Combine Wet and Dry Ingredients

Gradually pour the apple mixture into the bowl of dry ingredients. Stir the mixture continuously until it comes together, forming a soft cookie dough-like texture.

Shape the Donut Balls

Now comes the fun part! Take the dough and shape it into 10 even-sized balls, each about 1½ inches (4 cm) in diameter. For that extra touch of sweetness, dust each of the donut balls with a sprinkling of coconut sugar.
