– 1/2 cup chocolate chips (I used HU Chocolate from Thrive Market)
– 1/2 teaspoon coconut oil
– 45 pecan halves
– 1/8 teaspoon sea salt
Instructions
Prepare the Date Mixture
Start by placing your pitted Medjool dates into the bowl of a food processor. Give them a few quick pulses to break them down. Add the 1/8 teaspoon of sea salt and pulse again until the dates form a large sticky ball. Don’t be surprised if the mixture is extremely sticky at this stage!
Chill the Date Mixture
To make the date mixture easier to work with, cover your hands with plastic wrap and transfer the sticky date ball from the food processor onto a piece of plastic wrap. Wrap it up and pop it into the freezer for about an hour. This will firm it up and reduce the stickiness.
Shape the Turtles
After an hour in the freezer, take out the date mixture. Pinch off small pieces and roll them into small balls. Place these date balls on parchment paper or a cooling rack.
Add Pecans
Now, it’s time to bring the turtles to life! Take three pecan halves and arrange them in a triangle pattern on top of each date ball, making sure that a little bit of each pecan sticks out. As you press the pecans in, the date ball will flatten slightly.
Melt the Chocolate
In a microwave-safe bowl, combine the chocolate chips and the 1/2 teaspoon of coconut oil. Heat the mixture in the microwave for about 1 minute, or until the chocolate chips are nearly melted. Stir the mixture until all the chips have completely melted. If you prefer, you can also melt the chocolate on the stove using a double boiler.

Using a spoon, generously cover each turtle with the melted chocolate. Once all the turtles are coated, transfer them to the freezer for about 10-15 minutes to allow the chocolate to set.
