High Protein Banana Brownies

Ingredients

  • 3 large ripe bananas about 1.5 cups mashed
  • 1/2 cup runny nut butter e.g., almond, peanut
  • 2 eggs
  • 2/3 cup chocolate protein powder or cocoa powder
  • 3 tbsp maple syrup
  • 1/4 tsp baking soda
  • Pinch of salt
  • Chocolate chips I use no sugar added, measure with your heart!

Instructions

  • Preheat your oven to 350°F (175°C). Grease or line an 8x8 inch pyrex dish with parchment paper and set aside.
  • In a large mixing bowl, mash the ripe bananas until smooth.
  • Add the runny nut butter to the mashed bananas and mix until well combined.
  • Crack in the eggs and beat them into the banana-nut butter mixture until smooth.
  • Incorporate the chocolate protein powder (or cocoa powder) into the mixture, stirring until evenly distributed.
  • Pour in the maple syrup and mix well.
  • Add the baking soda and a pinch of salt to the batter, stirring until everything is fully combined.
  • If desired, fold in chocolate chips into the batter according to your preference.
  • Pour the batter into the prepared pyrex dish, spreading it out evenly.
  • Bake in the preheated oven for 12 minutes.
  • Once done, remove the brownies from the oven and allow them to cool in the dish for a few minutes before slicing into squares and serving.
