These waffles are not only bursting with the flavors of fall but are also packed with protein, making them the perfect start to your day.

Ingredients

  • 1/2 cup oats
  • 1 scoop vegan vanilla protein powder or your favorite plant-based protein powder
  • 2 eggs
  • 1/4 cup pumpkin puree
  • 1 tsp pumpkin pie spice
  • 1 tsp baking powder
  • Approximately 1/4 cup nut milk adjust as needed

Instructions

  • Start by gathering all your ingredients and having them ready to go.
  • In a blender, combine the oats, protein powder, eggs, pumpkin puree, pumpkin pie spice, and baking powder.
  • To achieve a smooth batter-like consistency, add approximately 1/4 cup of nut milk. You can adjust the milk quantity to get the desired thickness for your waffle batter.
  • Blend until all the ingredients are well combined. If necessary, scrape down the sides of the blender to ensure everything is mixed evenly.
  • Preheat Your Waffle Iron
  • While your waffle batter is coming together in the blender, preheat your waffle iron according to its manufacturer's instructions.
  • Ensure your waffle iron is well-greased to prevent sticking.
  • Once your waffle iron is hot and ready, pour the pumpkin protein waffle batter onto the iron, using a ladle or measuring cup.
  • Close the lid and cook the waffles until they're golden brown and crisp. Cooking times may vary, so keep an eye on them.
  • For a classic touch, drizzle them with maple syrup. If you want to boost the protein content and add a creamy element, mix plain Greek yogurt with maple syrup for a delectable topping alternative.
