Prep Time 15 minutes
Freeze Time 2 hours

Ingredients

Base:

  • 1 cup almond flour
  • 3 tbsp maple syrup
  • 2 tbsp olive oil or coconut oil
  • 1 tsp vanilla extract
  • Pinch of salt

Caramel Layer:

  • 1/3 cup almond butter
  • 1/4 cup maple syrup
  • 1 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • Pinch of salt

Chocolate Topping:

  • 1 cup chocolate chips
  • 1 tsp olive oil or coconut oil

Instructions

Make the Base:

  • 1. In a medium bowl, mix almond flour, maple syrup, olive oil (or coconut oil), vanilla extract, and a pinch of salt until well combined. The mixture should resemble a soft dough.
  • 2. Press about a teaspoon of this mixture into the bottom of mini muffin cups or silicone molds. Use the back of a spoon to press it down firmly. Place in the freezer while you prepare the caramel layer.

Prepare the Caramel Layer:

  • 1. In a small bowl, combine almond butter, maple syrup, melted coconut oil, vanilla extract, and a pinch of salt. Stir until smooth and creamy.
  • 2. Spoon about a teaspoon of the caramel mixture over the chilled base layer in each mold. Spread it out evenly.

Add the Chocolate Topping:

  • 1. In a microwave-safe bowl, melt the chocolate chips with the olive oil (or coconut oil) in 30-second intervals, stirring in between until smooth.
  • 2. Spoon the melted chocolate over the caramel layer, spreading it out evenly to cover completely.

Freeze:

  • 1. Place the filled molds back in the freezer for at least 2 hours, or until the chocolate is fully set.

Serve:

  • Once set, pop the Twix bites out of the molds and enjoy!
