Ingredients
Base:
1cupalmond flour
3tbspmaple syrup
2tbspolive oil or coconut oil
1tspvanilla extract
Pinchof salt
Caramel Layer:
1/3cupalmond butter
1/4cupmaple syrup
1tbspcoconut oilmelted
1tspvanilla extract
Pinchof salt
Chocolate Topping:
1cupchocolate chips
1tspolive oil or coconut oil
Instructions
Make the Base:
1. In a medium bowl, mix almond flour, maple syrup, olive oil (or coconut oil), vanilla extract, and a pinch of salt until well combined. The mixture should resemble a soft dough.
2. Press about a teaspoon of this mixture into the bottom of mini muffin cups or silicone molds. Use the back of a spoon to press it down firmly. Place in the freezer while you prepare the caramel layer.
Prepare the Caramel Layer:
1. In a small bowl, combine almond butter, maple syrup, melted coconut oil, vanilla extract, and a pinch of salt. Stir until smooth and creamy.
2. Spoon about a teaspoon of the caramel mixture over the chilled base layer in each mold. Spread it out evenly.
Add the Chocolate Topping:
1. In a microwave-safe bowl, melt the chocolate chips with the olive oil (or coconut oil) in 30-second intervals, stirring in between until smooth.
2. Spoon the melted chocolate over the caramel layer, spreading it out evenly to cover completely.
Freeze:
1. Place the filled molds back in the freezer for at least 2 hours, or until the chocolate is fully set.
Serve:
Once set, pop the Twix bites out of the molds and enjoy!
