Ingredients
Base:
- 1 cup almond flour
- 3 tbsp maple syrup
- 2 tbsp olive oil or coconut oil
- 1 tsp vanilla extract
- Pinch of salt
Caramel Layer:
- 1/3 cup almond butter
- 1/4 cup maple syrup
- 1 tbsp coconut oil, melted
- 1 tsp vanilla extract
- Pinch of salt
Chocolate Topping:
- 1 cup chocolate chips
- 1 tsp olive oil or coconut oil
Key Ingredient Notes
Almond Flour: Provides a grain-free base that’s nutty and slightly sweet, perfect for a cookie-like texture.
Maple Syrup: Adds natural sweetness and pairs well with the almond flour for a caramel-like base.
Almond Butter: The star of the caramel layer, giving it that rich, creamy texture.
Chocolate Chips: Choose high-quality chocolate for the best flavor.
Prep Tips:
For the Base:
- Mix Thoroughly: Make sure you mix the almond flour, maple syrup, olive oil (or coconut oil), vanilla extract, and salt well. You want a dough-like consistency that’s easy to press into the molds.
- Press Firmly: Press the base mixture firmly into your molds. This helps it hold together better once frozen, giving you a nice, solid layer to build on.
For the Caramel Layer:
- Smooth and Creamy: Stir the almond butter, maple syrup, melted coconut oil, vanilla extract, and salt until completely smooth. If the mixture is too thick, warm it slightly in the microwave to make it easier to spread.
- Chill the Base: Make sure the base layer is fully set before adding the caramel. This prevents the caramel from mixing with the base and keeps the layers distinct.
For the Chocolate Coating:
- Even Melting: Melt the chocolate chips with the olive oil (or coconut oil) in short, 30-second bursts in the microwave, stirring in between. This ensures that the chocolate melts evenly without burning.
- Smooth Application: Spoon the melted chocolate over the caramel layer and spread it out evenly. A small offset spatula can help you get a smooth, even coating.
Instructions
Make the Base:
- In a medium bowl, mix almond flour, maple syrup, olive oil (or coconut oil), vanilla extract, and a pinch of salt until well combined. The mixture should resemble a soft dough.
- Press about a teaspoon of this mixture into the bottom of mini muffin cups or silicone molds. Use the back of a spoon to press it down firmly. Place in the freezer while you prepare the caramel layer.
Prepare the Caramel Layer:
- In a small bowl, combine almond butter, maple syrup, melted coconut oil, vanilla extract, and a pinch of salt. Stir until smooth and creamy.
- Spoon about a teaspoon of the caramel mixture over the chilled base layer in each mold. Spread it out evenly.
Add the Chocolate Topping:
- In a microwave-safe bowl, melt the chocolate chips with the olive oil (or coconut oil) in 30-second intervals, stirring in between until smooth.
- Spoon the melted chocolate over the caramel layer, spreading it out evenly to cover completely.

Hey, did you know this…
A Brief History of Twix
Twix, originally known as “Raider” in the UK, was introduced by Mars, Incorporated in 1967. The candy bar is renowned for its combination of crunchy cookie, smooth caramel, and rich milk chocolate. Its unique texture and flavor quickly gained popularity, leading to its global recognition. Over the years, Twix has seen various iterations and limited editions, but its classic combination remains a favorite for many.
Tips for Success:
Temperature Matters: Ensure each layer is fully set before adding the next. This helps maintain clean, distinct layers and prevents mixing between the base, caramel, and chocolate.
Chill Time: Be patient and allow your Twix bites to freeze for at least 2 hours. This step is crucial for ensuring that the bites hold their shape and have a firm texture.
Even Layers: When pressing the base into the molds, make sure it’s even and well-compacted. For the caramel and chocolate layers, aim for a smooth, even spread to achieve a uniform taste and texture.
Microwave in Intervals: When melting chocolate, do it in short bursts of 30 seconds, stirring in between. This helps prevent overheating and ensures a smooth, creamy coating.
Choose the Right Molds: Silicone molds work best for easy removal and maintaining the shape of your Twix bites. If you don’t have silicone molds, line a mini muffin tin with paper liners.

Recipe Variations
Here are two fun add-ins or variations to mix things up with your Twix Bites:

Flavor Twist: Add a sprinkle of sea salt on top of the chocolate before it sets for a touch of sweet and salty.
