Ingredients

  • 1 cup long-grain white rice

  • 2 cups bone broth (chicken or vegetable)

  • 1/2 cup fresh cilantro leaves, finely chopped

  • 1 lime (both zest and juice)

  • Salt, to taste

Instructions

  1. Rinse the Rice: Begin by rinsing the rice under cold water until the water runs clear. This step helps remove excess starch, resulting in fluffier rice once cooked.

  2. Zest and Juice the Lime: Using a fine grater or zester, carefully zest the lime to collect the outer green skin. Be cautious to only zest the green part, avoiding the bitter white pith underneath. After zesting, cut the lime in half and juice it to extract its refreshing citrus flavor.

  3. Cook the Rice: In a medium saucepan, combine the rinsed rice and bone broth. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and has absorbed all the liquid.

  4. Fluff the Rice: Once the rice is cooked, remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes. Then, using a fork, fluff the rice to separate the grains and ensure a light, fluffy texture.

  5. Add Flavor: While the rice is still warm, gently fold in the chopped cilantro, lime zest, and lime juice. The residual heat will help meld the flavors together.

  6. Season to Taste: Taste the cilantro lime rice and season with salt as needed. Adjust the amount of salt according to your preference, keeping in mind that the bone broth may already add some saltiness.

  7. Serve and Enjoy: Transfer the cilantro lime rice to a serving dish and garnish with additional fresh cilantro leaves or lime wedges for presentation. Serve alongside your favorite Mexican or Latin-inspired dishes such as tacos, burritos, enchiladas, or grilled meats.
