Preheat and Prep

Start by preheating your oven to 350°F (175°C). Then, line a muffin tin with paper liners and give them a quick spritz of nonstick spray to ensure your muffins release easily.

Mix the Wet Ingredients

In a large mixing bowl, whisk together the wet ingredients – pumpkin puree, melted coconut oil, eggs, maple syrup, and vanilla extract. This combination will give your muffins a rich, velvety texture and a hint of sweetness.

Blend the Dry Ingredients

In a separate bowl, whisk together the dry ingredients – oat flour, baking powder, baking soda, salt, and the warm, comforting pumpkin pie spice. This spice blend is the secret to those cozy autumn flavors we all love.

Combine Wet and Dry

Now, it’s time to marry the wet and dry ingredients. Pour the dry mixture into the bowl with the wet ingredients and stir until everything is beautifully combined. This ensures a uniform distribution of flavors and ensures that your muffins will rise to perfection.

Fold in the Goodies

What sets these muffins apart are the delightful surprises hidden within. Gently fold in the dark chocolate chips and chopped pecans. This is where you get that irresistible nutty crunch and pockets of rich chocolate.

Scoop and Bake

Using a scoop or spoon, portion the muffin batter into your prepared muffin tin, filling each cup about three-quarters full. This allows your muffins to rise and form that perfectly rounded top. Bake them in the preheated oven for approximately 20 minutes or until a toothpick inserted in the center comes out clean.

Cool and Enjoy

Once your muffins have achieved golden perfection and filled your kitchen with a tantalizing aroma, remove them from the oven and let them cool in the muffin tin for a few minutes. Then, transfer them to a wire rack to cool completely.

storing your muffins

Now that you’ve whipped up a batch of these irresistible Pumpkin Chocolate Chip Muffins, you might be wondering how best to store them to keep their freshness intact. Proper storage ensures that you can savor their deliciousness over time. Here are some tips on how to store your muffins:

Room Temperature (Short Term)

If you plan to consume your muffins within a day or two, you can store them at room temperature. Place them in an airtight container or cover them with plastic wrap to keep them moist. Be sure to enjoy them while they’re at their freshest.

Refrigeration (Longer Shelf Life)

For longer storage, consider keeping your muffins in the refrigerator. Place them in an airtight container or a resealable plastic bag to prevent moisture loss. They can stay fresh for up to a week in the fridge.

Freezing (Extended Storage)

These muffins freeze beautifully, making them a convenient treat for busy days or unexpected cravings.

Here’s how to do it:

  •  Cool Completely: Allow the muffins to cool completely to room temperature before freezing.

  • Wrap Individually: Wrap each muffin individually in plastic wrap or aluminum foil. This step prevents them from sticking together and helps maintain their texture.

  • Gallon-Sized Bag: Once individually wrapped, place the muffins in a gallon-sized plastic freezer bag. Squeeze out any excess air before sealing the bag to prevent freezer burn.

  • Label and Date: Don’t forget to label the bag with the date, so you can keep track of how long they’ve been in the freezer. These muffins can be stored for up to three months.

Thaw and Reheat

When you’re ready to enjoy a frozen muffin, simply remove it from the freezer and let it thaw at room temperature for a few hours or overnight in the refrigerator. To enjoy a warm, freshly baked taste, you can reheat your muffin in the microwave for a few seconds or in a preheated oven at 350°F (175°C) for about 5-10 minutes.

Whether you choose to savor your Pumpkin Chocolate Chip Muffins right away or save them for later, proper storage ensures that every bite is just as delicious as the first.

These Indulgent Pumpkin Chocolate Chip Muffins are a delightful fusion of autumn’s best flavors and are sure to become a household favorite. They’re perfect for breakfast, a snack, or even dessert. Enjoy the warm, comforting taste of pumpkin and spice combined with the indulgence of dark chocolate and the satisfying crunch of pecans.
