Ingredients

– 1/4 cup Vegan Vanilla Shakeology

– 4 TBSP of maple syrup or honey

– 1 cup (40g) gluten-free baking flour*

– 1/4 tsp. baking soda

– 1/4 tsp. salt

– 1 1/2 tsp. pumpkin pie spice

– 2 eggs

– 1/2 cup 100% pure canned pumpkin

– 1 tbsp. melted ghee

– 2 TBSP almond milk

– Optional chocolate chips sprinkled on top

For the Glaze

– 1/2 cup powdered monk fruit sweetener

– 3 tbsp maple syrup

– 1 Tbsp ghee

Instructions

Preheat and Prepare

Begin by preheating your oven to 350°F (175°C) and preparing your donut pans by greasing them lightly. This ensures easy removal and minimal cleanup.

Mix Dry Ingredients

In a large mixing bowl, combine your gluten-free baking flour, baking soda, salt, and that quintessential autumn flavor, pumpkin pie spice. This fragrant blend of spices will infuse your donuts with the warmth and coziness of the season.

Wet Ingredients Unite

In a separate bowl, whisk together the eggs, canned pumpkin, melted ghee, almond milk, and the sweetener of your choice—maple syrup or honey. We’re all about options here, but both bring a delightful sweetness to the party.

The Shakeology Magic

Now, let’s add a nutritious twist! Fold in 1/4 cup of Vegan Vanilla Shakeology. This not only adds a creamy vanilla flavor but also boosts the donuts with essential nutrients, making them a healthier choice.

Combine and Fold

Gently combine your wet and dry ingredients until they form a harmonious donut batter. Don’t overmix; a few lumps are perfectly fine.

Chocolate Chip Bliss (Optional)

For an extra layer of indulgence, sprinkle some chocolate chips on top of each donut. This step is entirely optional but highly recommended for those with a sweet tooth.

Bake to Perfection

Spoon the batter into your prepared donut pans. Pop them into the preheated oven and let the magic happen. Bake for approximately 10-12 minutes or until a toothpick inserted into the center comes out clean. Your kitchen will be filled with the warm, comforting aroma of pumpkin spice.

The Sweet Glaze

While your donuts are cooling, it’s time to whip up the delectable glaze. In a small bowl, combine powdered monk fruit sweetener, maple syrup, and ghee. Stir until smooth and drizzle-worthy.

Drizzle and Enjoy

Once your donuts have cooled slightly, generously drizzle each one with the sweet monk fruit glaze. The contrast between the spiced donuts and the sugary glaze is sheer perfection.
