Dairy-Free and Delicious!
I’ve always loved experimenting with dairy-free desserts, and the Ninja Creami has become my go-to gadget for creating indulgent, creamy treats at home. Recently, I decided to try something new using one of my favorite pudding brands, So Delicious.
With just a couple of tablespoons of their vanilla pudding, a bit of homemade cashew milk creamer, and a delicious cookie dough add-in, I created a dessert that’s not only incredibly easy to make but also absolutely irresistible. Here’s how it all came together!
Ingredients:
- 1 tablespoon monk fruit
- 2 tablespoons So Delicious vanilla pudding
- 1 plant -based vanilla protein shake (pre-made single serve – approx 11-14oz)
- 1 Mid-Day Square cookie dough flavor or your favorite dairy-free cookie dough chunks
Instructions:
1. Prepare the Base:
- In a small mixing bowl, combine 2 tablespoons of So Delicious vanilla pudding with 1 carton (11-14oz) of pre-made vanilla protein shake. (If you’re going to use a protein shake, use one that’s like already made. don’t use a powder plus milk or water. I hear it just comes out better this way.)
- Stir the mixture until it’s well blended and smooth.
2. Freeze:
- Pour the pudding mixture into the Ninja Creami pint container.
- Secure the lid and place it in the freezer for at least 24 hours.
3. Spin the Ice Cream:
- Once the mixture is fully frozen, remove the pint from the freezer and let it sit on the counter for about 10 minutes to soften slightly.
- Place the pint into the Ninja Creami and lock it into the machine.
- Select the “Ice Cream” setting and spin the base.
4. Add Liquid and Re-Spin:
- After the first spin, check the consistency. If it’s too thick or crumbly, add a splash of dairy-free milk or creamer to smooth it out.
- Ensure that the liquid covers just enough of the surface without creating a hole in the middle.
- Re-spin the mixture until it reaches a creamy, smooth consistency.
5. Mix in the Cookie Dough:
- Break the Mid-Day Square (or your choice of cookie dough) into chunks.
- Add the chunks on top of the ice cream. Instead of using the mix-in setting, which thoroughly incorporates the add-ins, leave the chunks on top for a more satisfying bite.
6. Serve and Enjoy:
- Scoop out your delicious, creamy treat, making sure to get some chunky cookie dough in each bite.
- Enjoy your dairy-free, cookie dough-infused ice cream!
Storage and Re-Spin Tips for Ninja Creami
Storage Tips:
- Freeze Time: Ensure your mixture is frozen for at least 24 hours. This guarantees it reaches the right consistency for the creamiest results.
- Level Surface: When freezing, place your Ninja Creami pint on a flat, level surface to prevent uneven freezing, which can affect the texture of your ice cream.
- Covering: Always securely cover the pint with the provided lid to prevent freezer burn and to avoid any unwanted flavors from being absorbed into your ice cream.
- Labeling: If you’re making multiple batches, label the pints with the date and flavor. This helps you keep track of how long they’ve been in the freezer and makes it easier to find your favorite flavors.

Re-Spin Tips:
- Slight Defrosting: Before spinning, let the pint sit at room temperature for about 5-10 minutes. This softens the surface, helping the Ninja Creami blades achieve a smoother, creamier texture.
- Check Consistency: After the first spin, assess the texture. If it’s crumbly or too thick, add a small amount of liquid (like your favorite non-dairy milk or creamer) to the pint.
- Avoid Over-Spinning: Re-spin just until smooth. Over-spinning can lead to a thinner consistency, especially if too much liquid is added.
