Here’s a copycat recipe from one of my favorite breakfast spots, FirstWatch. With their breakfasts, FirstWatch serves a side of crisp, fresh greens drizzled with the most amazing lemon poppyseed dressing. It’s so good that it has me craving vegetables for breakfast! So, let’s recreate this dressing that can elevate your morning greens.

Storage

If you happen to have some dressing left over (which is rare because it’s that good!), store it in an airtight container in the refrigerator. I love these mason jars + lids or dressings bottles you can find here in my Amazon storefront. Homemade dressings typically last for up to one week when properly refrigerated. Give it a good shake before using it again to re-emulsify the ingredients.

Lemon Poppyseed Dressing

My copycat First Watch Lemon Poppyseed Dressing recipe! It is light, refreshing, and packed with flavor, making it a perfect complement to your greens, whether it's for breakfast or any other meal.

Ingredients

  • The juice of one lemon approximately 1 tablespoon
  • 1/2 cup of extra virgin olive oil
  • A pinch of salt
  • 1 tablespoon of Dijon mustard
  • 2 tablespoons of honey
  • 1 tablespoon of poppy seeds

Instructions

  • Start by squeezing the juice from one lemon. You’ll need about a tablespoon of lemon juice for this recipe
  • Next, pour half a cup of extra virgin olive oil into a bowl.
  • Add a pinch of salt to the olive oil.
  • Now, incorporate a tablespoon of Dijon mustard and two tablespoons of honey.
  • Finally, sprinkle in a tablespoon of poppy seeds.
  • Give all the ingredients a mix.
  • Serve over your favorite mix of greens.
