Black Bean and Corn Salsa: Add a scoop of homemade black bean and corn salsa to your Southwest Chicken Salad Wrap for an extra burst of flavor and texture. Simply combine black beans, corn kernels, diced tomatoes, red onion, cilantro, lime juice, and a pinch of salt for a delicious salsa that complements the other ingredients perfectly.

Avocado Crema: Elevate your wrap with a creamy and tangy avocado crema. Blend ripe avocados with Greek yogurt, lime juice, garlic, cilantro, and a dash of cumin until smooth and creamy. Drizzle this flavorful crema over the salad before wrapping it up for an added layer of richness.

Mexican Carne Asada Version

Ingredients:

  • Taylor Farms Mexican Street Corn Chop Salad Kit
  • Costco Carne Asada (grilled and sliced)
  • Siete Almond Flour Tortillas

Instructions:

  1. Prepare the Salad:
    • Open the Taylor Farms Mexican Street Corn Chop Salad Kit and mix the contents in a large bowl. This kit typically includes pre-chopped veggies and a flavorful dressing that will add a zesty kick to your wrap.
  2. Cook the Carne Asada:
    • If you’re using pre-cooked carne asada, simply slice it into thin strips. If you’re cooking it fresh, season it with your favorite spices and grill until it’s cooked to your desired doneness. Slice thinly once cooked.
  3. Assemble the Wrap:
    • Warm the Siete Almond Flour Tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until they’re pliable and lightly toasted.
    • Lay a tortilla flat and spread a generous amount of the Mexican Street Corn Salad down the center.
    • Top with slices of carne asada.
  4. Wrap and Enjoy:
    • Fold the sides of the tortilla over the filling and then roll it up from the bottom to secure everything inside.
    • Serve immediately and enjoy your fresh, flavorful Salad Wrap!

These wraps are perfect for a quick lunch or a light dinner. They’re full of crunch, flavor, and packed with nutrients, making them both satisfying and healthy. Enjoy your delicious creation!

Storage Tips

  • If you’re making these wraps ahead of time, store them individually wrapped in foil or plastic wrap to keep them fresh.

  • To maintain the crispness of the salad, consider keeping the salad mixture separate from the tortillas and chicken until ready to assemble and serve.

  • Store any leftover wraps in an airtight container in the refrigerator for up to 2 days. Enjoy them cold or gently reheat them in the microwave or oven before serving.
