Quick Lunch Prep

If you find a meal that you love, don’t be afraid to repeat it! 
My go to these past couple of weeks has been mason jar salad. I love them because they are so easy to prep ahead of time, and it’s also super easy to mix it up and get a lot of variety.

  1. Start with a base of two tablespoons of whatever dressing you want.
  2. And then make sure to layer all of your ingredients, so the ones that won’t absorb the dressing are at the bottom.
  3. You can even use a bigger mason jar and put the lettuce leaves in it, but I usually just cut up my lettuce the day of and then dump on all the toppings.
  4. I did my favorite Dairy Free Italian Dressing, red bell peppers, chicken, tomato, artichoke, heart, salami, pepperoni, olives and fresh basil.

And in just about 10 minutes, I put together four days worth of lunch!
