Quick Lunch Prep
If you find a meal that you love, don’t be afraid to repeat it!
My go to these past couple of weeks has been mason jar salad. I love them because they are so easy to prep ahead of time, and it’s also super easy to mix it up and get a lot of variety.
- Start with a base of two tablespoons of whatever dressing you want.
- And then make sure to layer all of your ingredients, so the ones that won’t absorb the dressing are at the bottom.
- You can even use a bigger mason jar and put the lettuce leaves in it, but I usually just cut up my lettuce the day of and then dump on all the toppings.
- I did my favorite Dairy Free Italian Dressing, red bell peppers, chicken, tomato, artichoke, heart, salami, pepperoni, olives and fresh basil.
And in just about 10 minutes, I put together four days worth of lunch!
