Ingredients
- 1 head of cauliflower
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1 1/2 teaspoons curry powder

Try these variations if you like!
Spicy Curry Cauliflower:
- In addition to the listed ingredients, add 1/2 teaspoon of chili powder or cayenne pepper for some heat.
- You can also include 1 teaspoon of minced garlic and 1/2 teaspoon of grated ginger for added depth of flavor.
- Toss the cauliflower florets with the olive oil, cumin, salt, curry powder, chili powder (or cayenne), garlic, and ginger
- Follow the cooking instructions as provided in the original recipe.
Coconut Curry Cauliflower:
- Along with the listed ingredients, include 1/2 cup of coconut milk and 2 tablespoons of chopped cilantro.
- After tossing the cauliflower with the olive oil, cumin, salt, and curry powder, add the coconut milk and stir
- Roast or cook the cauliflower as instructed in the original recipe.

- 1 head of cauliflower

Instructions
- Preheat your oven to 425°F (220°C).
- Take your cauliflower and give it a good rinse and chop into those bite-sized pieces. The key here is to cut the cauliflower into really small bite-sized pieces. Why, you ask? Because smaller pieces get crispier in the oven, and who doesn't love some extra crunch in their roasted veggies?
- In a large mixing bowl, combine the cauliflower pieces with 2 tablespoons of olive oil, 1 teaspoon of cumin, 1/2 teaspoon of salt, and 1 1/2 teaspoons of curry powder. Make sure to coat each piece evenly.
- Spread the seasoned cauliflower evenly on a baking sheet lined with parchment paper. This will make cleanup a breeze. Pop your cauliflower into the preheated oven and set your timer for 15 minutes. But wait, there’s more! Remember to flip those cauliflower bites halfway through the cooking time to ensure they get perfectly crispy on all sides.
