When we were on vacation in Bora Bora, we had the best chia pudding. I ate it every single morning at our resort and I topped it with mango puree and sliced almonds. It was so good that I had to recreate it. Once we got home I used my standard chia pudding recipe that I made the night before and then I blended up a mango with some honey to make it into a puree. I put that on top of the chia pudding along with some sliced bananas and almonds and oh my gosh, it was delicious!

Tips for Perfect Chia Pudding:
- Blending: This blends up in a breeze in the Vitamix blender I have! I love this blender so much!
- Stirring: Make sure to stir the mixture well initially and give it another stir after about 30 minutes in the fridge to prevent the seeds from clumping together.
- Consistency: If you find the pudding too thick in the morning, add a splash of your chosen milk and stir to achieve your desired consistency.
- Versatility: Feel free to experiment with different types of milk (almond, soy, oat) and sweeteners to suit your taste and dietary preferences.

Chia Pudding with Mango Puree

Chia Pudding Ingredients:
- 1 cup milk of choice -I used coconut milk
- 1 tbsp sweetener maple syrup, honey, or agave
- 4 tbsp chia seeds
- 1/2 tsp vanilla extract
Mango Puree Ingredients:
- 1 ripe mango diced
- 1 tbsp water
- 1 tbsp sweetener maple syrup, honey, or agave
Toppings:
- Sliced banana
- Slivered almonds
Instructions
- 1. In a medium bowl, combine the coconut milk, sweetener, chia seeds, and vanilla extract.
- 2. Stir well to ensure the chia seeds are evenly distributed.
- 3. Cover the bowl and refrigerate overnight, or for at least 4 hours. This allows the chia seeds to absorb the liquid and form a thick, pudding-like consistency.
- 4. In a blender, combine the diced mango, water, and sweetener. Blend until smooth.
- 5. Taste the puree and adjust the sweetness if needed, adding a bit more sweetener if you prefer.
- 6. In serving glasses or bowls, layer the chilled chia pudding with the mango puree.
- 7. Top with sliced banana and slivered almonds for an extra crunch and flavor.
