A Week of Dinners
I’ve lost 100 pounds without counting calories, points or macros, and this is what I ate for dinner every night this week.
- Monday: Mini Meatloaves. I used gluten free breadcrumbs and I had them with a side of green beans.
- Tuesday: Palmini Spaghetti. I use palmini noodles to sneak in extra veggies, they’re just hearts of palm. I did it with ground turkey and primal kitchen vodka sauce, which is my absolute favorite.
- Wednesday: Salad wraps (Mexican Carne Asada version). Using a salad kit from Taylor Farms, the Mexican street corn chop salad. Added carne asada from Costco, and almond flour tortillas, for a really delicious wrap.
- Thursday: we scrounged up some leftovers from the fridge.
- Friday: Take out from True Food Kitchen. I had a Salmon Citrus Salad , which was so delicious! (here is my copycat recipe)
- Saturday night: Air Fried Mahi Mahi with some Homemade Tartar Sauce.
- Sunday, I actually planned a second day of having leftovers, but we were all out…so it was Kevin’s Teriyaki Style Chicken Stir Fry form the fridge, which was perfect.
